Tigernuts are known throughout the world by different names, including nookon and chufa. Tigernuts are not actually nuts, though they are similar in nutritional content to nuts and seeds. Tigernuts are in fact, small root vegetables. The tuber is about the size of a chickpea. The tigernuts are sun-dried which makes them wrinkly in appearance. They are chewy in texture and have a sweet, slightly nutty flavor similar to coconut.
Our Paleo ancestors must have recognized the nutritional value of tigernuts as there is archeological evidence to show that tigernuts had been eaten for perhaps as long as 2 million years ago. Today we recognize that tigernuts are a great probiotic. Their resistant starch is a fiber that improves digestion because they are ready fuel for our gut biome. A single ounce of tiger nuts provides 40% of our daily recommended fiber intake. Tigernuts are also proven to help regulate our sugar levels. Because they are also low in fat and calories, they make the perfect nutritious snack food.
Raw tigernuts have been enjoyed for centuries in both food and drinks. Our raw Tigernuts can be eaten straight out of the bag or soaked in water overnight or in hot water for an hour. Use as a topping on salads or desserts. Mix them into smoothies and oatmeal.

Storage and shelf-life
Refrigeration is not required. Store in a cool, dark, dry place. Once opened, make sure to reseal the package for optimum freshness. Shelf life of up to 24 months.
